** P.S. - you can use any color dye, feel free to split the dough so you can have half pink and half red!
Ingredients
1 cup (2 sticks) salted butter (room temp)
1 - 1/2 cups granulated sugar
2 eggs
1 - 1/2 tsp white vinegar
2 tsp Vanilla Extract
1 tsp baking soda
1 - 1/2 tsp cornstarch
3 TBSP cocoa powder
2 - 1/4 cups all-purpose flour
12 oz. bag white chocolate chips
*You can use any color desired to make these cookies, pink for Valentines, Green for St. Patrick’s Day, or your favorite color! I recommend Americolor gel dye over liquid as it will give a more vibrant color without adding extra liquid to the dough.
Instructions:
Preheat oven to 350 degrees Fahrenheit
Cream together butter and sugar.
Add eggs, vinegar, and vanilla then mix.
Add a few drops of red gel dye then mix, you can add more to reach color desired.
Add baking soda, cornstarch, and cocoa powder then mix.
Add flour - slowly mix until just incorporated then increase speed and mix for about 1 minute.
Using a spoon or silicone spatula mix in white chocolate chips.
Scoop a heaping tablespoon of dough onto parchment lined baking sheet.
Bake on the middle rack for approximately 12 minutes.
Allow cookies to cool for a few minutes on the tray before transferring them to a wire rack or plate.
Tips/Frequently Asked Questions:
If you are using a Kitchenaid mixer be sure to use the paddle attachment for these. Using the whisk for a dough like this may break the wire!
I only have unsalted butter, is that OK?
Sure! Unsalted butter will work just fine - you may want to add some salt into the dough. About 1/4 tsp salt would be good!
Do I need to use parchment?
Nope. It is ok to use an ungreased cookie sheet, parchment makes for an easier clean up and they won’t stick to the pan.
I’m not a fan of white chocolate, what else can I use?
Chocolate chips taste great with these also. You can use semi-sweet, milk chocolate or even dark, they will all taste great.
What does tsp/Tbsp mean?
tsp stands for teaspoon. TBSP is tablespoon.
